Wilder Lazo's passion for genetics and innovation inspires him to push the boundaries of coffee cultivation. This lot has undergone a meticulous double fermentation process. The first fermentation takes place in sealed bags for 140 hours, during which the coffee remains with the mucilage, enhancing its vibrant floral and citric notes. The second fermentation takes place in plastic tanks for 2 days, then dried under the sun for 18 days. Through this process, this coffee has achieved floral notes of lemongrass, green tea, and sweet citrus fruit like mandarin.
This coffee makes one part of our Brewers Cup blend, where we won 2nd place in The Netherlands.
"We have sourced three coffees from Colombia. When brewed, the flavors will form a harmonious blend, much like carefully blending colors on a canvas to create depth and emotion."
In our first time competing for the Brewers Cup, we wanted to challenge ourselves to create a blend - something we have never done before as roasters and as baristas, and something we knew we could learn a lot from as coffee professionals.
