Producer Jose Arnulfo Montiel, better known as Fito, is a renown producer from Chalatenango, a district located in northwest El Salvador. Fito Montiel is a second generation farmer, and he manages his farm La Hondurita together with his son, Jose. Fito Montiel has always focused on quality - he has placed in the top ranks in multiple Cup of Excellence in the past. Aside from his award-winning accomplishments, Fito is known for being one of the first producers that planted Pacamara, a variety developed in El Salvador. It is a hybrid of Pacas and Maragogipe, characterized by its unusually large bean size.
This lot is a Pacamara lot, carefully harvested at La Hondurita and processed at CaféNor, a carbon neutral mill founded by Alejandro Valiente. At CaféNor, the mills are powered by renewable solar energy and they have a water treatment system to minimize waste. CaféNor supports around 65 neighboring smallholder producers with 1 to 3 hectare farms by providing them with processing infrastructure, as well as investing in educating producers by passing on the knowledge of permaculture to conserve natural resources, and by introducing telecommunication technology to improve communications amongst producers for better transparency and traceability of their coffee.
This coffee was processed as a natural - after 24 hours of fermentation, they cherries were dried on shaded raised bed for 36 to 42 days. The result of this traditionally processed coffee is a cup with rich sweetness of dried apricots and molasses, coupled with refreshing citric notes of a grapefruit.
