CAFEGA is a green coffee importer based in Barcelona, Spain, focusing on collaborating with producers who are committed to environmental sustainability, and open to innovation and transparency. One of their partners is Marlon Rojas Pérez, and his farm La Reserva, located in Pitalito, Huila, Colombia. This coffee is marks the second lot by Marlon and CAFEGA in our collection.
Marlon's lot is the first ever Bourbon Papayo in our coffee lineup. Bourbon Papayo (or simply, Papayo) is a native species in the Huila region of Colombia. Its history remains quite a mystery as little is known about the origin of this variety. What is memorable of Papayo though, is its versatility in adapting to different processing methods resulting in unique flavor profiles.
This Bourbon Papayo went through two stages of fermentation. First, an aerobic fermentation for 24 hours. Then, an anaerobic fermentation for 60 hours in barrels. During the fermentation stages, mosto (fruit musts) were added - Marlon used two fruits from the passion flowers (pasiflora) family: passion fruit and cholupa, a sweet and tangy fruit native to Colombia. The cherries were then dried on raised African beds for 15 days.
Through the extended co-fermentation process, this Bourbon Papayo has a unique tropical fruit notes of bright passion fruits and juicy mango, accompanied by calming aroma of eucalyptus.
